In 1842, Bavarian brewer Josef Groll descended into the sandstone cellars beneath Plzeň with a revolutionary recipe that married pale Moravian barley, aromatic Žatec hops, and the city's unusually soft water.
The result was the world's first golden lager — a beer so clear and bright that it rendered every dark brew obsolete within a generation. Today, those same nine-kilometre cellars maintain a constant six degrees Celsius, and the copper kettles still brew according to Groll's original decoction method.
The Pilsner Urquell facility in Plzeň remains the sole producer of authentic Pilsner lager, distinguished by its triple-decoction mashing and open fermentation in massive oak vats. The brewery's 1892 gate, designed by architect Rudolf Štech, opens onto a complex where steel vessels tower beside brick malting floors and the original 1893 brewhouse — now a protected monument — still operates for ceremonial batches. The brewery's touring infrastructure expanded significantly in 2018 with a new visitor centre, multimedia exhibits tracing Pilsner's global influence, and an on-site taproom serving sixteen beer styles produced across the Plzeňský Prazdroj group. The standard 100-minute tour includes the brewing hall, fermentation cellars, and the historic underground lagering tunnels, concluding with a three-sample tasting. English-language departures run hourly between 09:00 and 16:00, accommodating the steady flow of travellers making the 90-kilometre journey from Prague.
